Ingredienser
- 1 pakke (250 g) Quorn stykker
- 2 spsk kokosolie
- 1 mellemstor butternutsquash, skrællet, renset og skåret i tern (700 g)
- 1 løg, hakket
- 1 spsk reven ingefær
- 1 spsk reven citrongræs
- 2 pressede hvidløgsfed
- ½ tsk salt og ½ tsk peber
- 750 ml grøntsagsfond
- 4 spsk sojasauce
- 1 tsk rørsukker
- En 400 ml dåse kokosmælk
- 1 spsk limesaft
- Skallen af ½ lime
- 2 kaffirlimeblade
- 120 g ristede jordnødder
- ¼ kop finthakket koriander
- 2 spsk sriracha hot sauce
Fremgangsmåde
- Varm olien i en mellemstor kasserolle over mellemvarme. Steg butternutsquashen, løget, ingefæren, citrongræsset, hvidløget, salt og peber i 5-7 minutter, eller indtil ingredienserne begynder at blive bløde. Rør grøntsagsfonden, sojasaucen og rørsukkeret i og bring det hele i kog. Skru ned for varmen og lad suppen simre i 15-20 minutter, eller indtil squashen er meget mør. Blend suppen i en blender eller med en stavblender, til den er helt jævn.
- Rør kokosmælken og limesaften i suppen og lad den simre igen. Rør Quorn Stykkerne i og lad suppen simre i yderligere 12 minutter.
- Fordel den færdige suppe mellem 4 skåle. Pynt med jordnødder, koriander og smag til med sriracha hot sauce.
